A Little Bit Of Autumn
This post is really an Autumn post. However, I just couldn't help myself.
The other day, I made some pumpkin pancakes with warm, maple syrup. Oh my, they were simply amazing.
Here's the recipe:
~2 cups all purpose flour or you could use half wheat flour
~2 tbs brown sugar
~1 tbs baking powder
~1/2 tsp salt
~1/2 tsp pumpkin pie spice
~1 1/2 cups milk
~1 cup pumpkin puree
~1/2 cup eggs (I think that's about 2 eggs)
~2 tbs oil
Mix dry ingredient, then in a separate bowl mix wet ingredients, then mix all together.I got the recipe from http://my.hearthealthyonline.com/recipe/pancakes-waffles/pumpkin-pancakes/
I hope you all enjoy them. They made me think of Fall. Don't get me wrong, I'm very glad it's summer time. I love the lake, camping, gardening, grilling, late nights with friends....but Oh, how I love Fall~~The beautiful colors of the crisp leaves, pumpkins, cooking...lots of baking, coffee, pumpkin patches, scarecrows, and so much more.
